Creamy Mushroom Soup
Recipe Ingredients:
- 12 oz mushrooms
- diced
- 1 onion
- chopped
- 1 shallot
- chopped
- 1 celery stalk
- chopped
- 3 tbsp butter
- or vegan substitue
- 2 tbsp olive oil
- 1 tbsp flour
- 1 c. broth of your choice
- 1 c. cashew milk
- salt to taste
Instructions:
- Heat butter and olive oil over medium heat. Add onion and shallot until soft. Add diced mushrooms and cook until soft, adding salt to taste.
- Stir in flour until coated and turn off heat.
- In separate sauce pan, heath broth to simmer and add celery. Stir in mushroom and onion mixture. Simmer for 10 minutes or so.
- Stir in cashew milk and add more salt to taste. Garnish with herbs of your choice; add soy sauce and/or hot sauce to taste.
- Enjoy!
